6-ingredient Weekday Cookies


Remember when I shared the very best chocolate chip cookie recipes?  I still love them and still think they are the tastiest chocolate chip cookies I've eaten, but sometimes I need something a little faster!  Cookies are generally not fast, but what's to be done when there are weekday guests and you don't want to sacrifice taste?  Mix up a batch of Chocolate Chip Cookie Bars, of course! 

Preheat oven to 350 degrees. 

1 cup (2 sticks) butter
1 cup brown sugar

1 teaspoon vanilla

Beat first three ingredients on medium speed until fluffy and well blended.

2 cups flour
1/2 teaspoon salt

Add to butter mixture and mix well.

1 cup semi-sweet (or dark) chocolate chips

Stir into dough.  Press mixture into 15x10x1-inch baking pan. 


Bake for 20 minutes or until lightly browned.  Cool 5 minutes and cut into bars while still warm.
Makes 3 dozen bars.  
 


 
                
For-fun variations:
  • Cut into longer, skinnier chocolate chip sticks, ideal for dipping!
  • Use a cookie cutter to cut out heart shapes for Valentine's Day!

  1. I always make these in a 13 X 9 baking dish. They are so good and easy to make. Yum!

  2. These are a favorite in our house - they seem to disappear though, so much quicker than cookies!
