On occasion, we'll order Chinese food for a weekend treat. Brian loves it. I love it while I'm eating it, but 9 times out of 10, I end up feeling nauseous afterwards and declare I'll never eat Chinese food again! A few months ago, I tried a crockpot recipe that met our Chinese cravings without the yucky feelings. Brian and I fell in love with it and one evening when we wanted Chinese but didn't have time for the crockpot, I adapted the recipe into this super easy, super fast skillet version.
2 cups cooked chicken, cut into bite sized pieces
½ cup honey
¼ cup soy sauce
1/8 cup ketchup
1 tablespoon coconut oil
1 tablespoon coconut oil
¼ teaspoon pepper
Put chicken into a skillet. Whisk the rest of the ingredients together in a small bowl and pour over chicken in pan. Stir to coat chicken. Cook on medium heat, stirring occasionally, until sauce bubbles and thickens slightly.
(Note: If you do not have cooked chicken, you can use raw. Before you put the sauce into the skillet, cook the chicken in 1-2 tablespoons of coconut oil. You can use another preferred oil, but coconut oil is tasteless so it does not affect the flavor of the dish.)
Serve with steamed rice and peas.
Do you think it's the msg that makes you sick? Have you been able to try a place that does not use it? My mama has the same trouble- it makes her not able to sleep, too! :(

I suspect that it is the MSG so the easiest thing to do is avoid Chinese food altogether. :-) Thankfully, it never affects my sleeping!

We do take out every few months ... but it leaves most of us feeling yucky. We'll have to try this.
